Salmon Cakes
makes about 5 salmon or crab
cakes...double the recipe as this is good!
1 egg
1/3 cup milk
1/4 ts pfreshly ground white pepper
1/4 to 1/2 tsp fine sea salt (depending on
crackers...)
1/8 tsp
cayenne 1 cup
flaked cooked salmon or crab
1 tbsp snipped fresh chives 1
tbsp snipped fresh parsley
2 tbsp extra-virgin
oil
2 tbsp flour or fine corn meal
lemon wedges for serving
In
batter bowl, egg and then add crackers, milk, mustard, pepper, salt, cayenne,
salmon, chives, and parsley. Shape into patties, using the flour or corn meal to
coat them and to help hold together. Heat oil in saute pan. Add patties and cook
over medium heat until brown on both sides, about 6 minutes total. Serve with
lemon.
