OUR CANNED SALSA

25 peeled, chopped tomatoes (we used large Romas,blanched )
1 seeded, chopped, green pepper
10-12 seeded, chopped, roasted (drissled with olive oil ) hot peppers
6 cloves garlic, roasted, minced after skining
2 bunches chopped green onion
2 tsp. sea salt
4 tsp sugar (Beth said!)
bit of fresh ground pepper
1 1/2 c. apple cider vinegar
juice of 2 limes (no seeds)
1/2 bunch chopped cenaltro leafs

 

Combine all ingredients in large pot. Bring mixture to a boil; reduce heat and simmer 20 minutes. Pour hot mixture into hot jars, leaving 1" inch headspace. Adjust lids; process 30 minutes in boiling water bath. Makes about 10-12 500ml jars
