Apple Pie by Grandma Ople

We changed this recipe a bit (like we all do…) and my Mom said this was the best apple pie she ever had (and she doesn’t like apple pie)
Put a dusting of cinnamon over the apples before doing the lattice crust
AND added a tablespoon of corn starch to the sauce to thicken all else I followed the recipe (well we used two Mac and three huge Fuji apples instead of eight Granny Smiths and changed other quantities). You will need a cookie sheet covered with tinfoil to catch the drippings of this pie, ALL THIS WORK IS WORTH IT!

Ingredients

 1 recipe pastry for a 9 inch double crust pie

 1/3 cup unsalted butter

 3 tablespoons all-purpose flour

 3 tablespoons water

 1/3 cup white sugar

 1/3 cup packed brown sugar

 5 to 8 Granny Smith apples - peeled, cored and sliced
--- we added
- good dusting of cinnamon on apples in the uncooked pie
- tbsp of corn starch into the sauce for thickening

 

Instructions

Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.

Place the bottom crust in your pan. Fill with apples, mounded slightly.
Dust apples with cinnamon
Cover with a lattice work crust and again hit a couple of spots with the cinamon.
Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.

Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft (we did 40 min and let rest in the oven).
