Ingredients
· 8-10 pound bird · celery
· Salt and pepper · onion
· vegetable spray · garlic
Instructions
Thaw bird in the fridge for a couple of days, wash & remove innards (cook'em along side for the dog!)
- put celery, onion & garlic in the cavity and spray with vegetable spray, salt and pepper (breast up)
- wrap the legs in sprayed tin foil
- bake at 325 - 350 for 1 1/2 hrs uncovered, baste and remove tin foil, salt & pepper again
- cook for approx 4hrs in total basting every 45 minutes or so, knock temp down BUT no lower than 200 if it's cooking too fast
Place drippings in a large bowl in the fridge for an hour to separate the fat in the gravy (says Dad BUT Mom doesn't always follow instructions)
The time of cooking depends on the size of the bird; temp of your oven etc
Buy one or two of those fresh chunks of turkey breasts (or whatever) ready to cook and set it on a couple of onion slices in a tinfoil lined casserole dish (makes for real easy cleanup)
dump some homemade chili sauce over the meat and bake it at 350 for approx. 1.5 hrs
This make killer sandwich meat, uses up that open jar of chili sauce AND smells up the kitchen about as good as it gets!
