Ingredients
· 1 7oz steak per serving
· Olive oil
· Salt & pepper
· Lemon
Grilled Instructions
Bring your meat to room temp and heat your barbecue on high
Rub a bit of olive oil on both sides of the blue marlin and season both sides
liberally with salt and fresh cracked black pepper.
Cook the fish for 3 minutes on each side over high heat with the lid open.
Tip: Don’t move the steak or try to flip it too early. After 3 minutes it
will release from the grill without any sticking.
Depending on the thickness you may need only 2 minutes for the second side. The
aim is to have the center remain
slightly translucent.
Do not overcook! (last night's was 1.5 inch thick tapered so I did 5 and 3
min, you could feed this to a person whom doesn't like fish,
the texture and colour was similar to a thick tender pork chop, if I was blind
folded, I'm not sure I could identify this as fish!)
Squeeze some fresh lemon over the blue marlin steak before eating.

Baked Instructions
Bake at 350 degrees F for 7 minutes on each side. Marlin has it's own strong
flavor and can be cooked or marinated with just
about anything. Garlic, butter, lemon and parsley are fine. Try olive oil,
balsamic vinegar and rosemary if you like.
Marlin can certainly be pan fried or broiled too.
